- 1 lb store-bought gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, cooking until golden brown, about 6-7 minutes per side. Remove from skillet.
- Add minced garlic to the skillet and sauté for about 30 seconds. Add spinach and cook until wilted.
- Boil salted water in a separate pot and cook gnocchi according to package instructions.
- Reduce heat in the skillet, pour in heavy cream, and stir in Parmesan until melted.
- Drain the gnocchi and add them to the skillet, mixing everything together well.
- Taste and adjust seasoning before serving hot, garnished with extra Parmesan if desired.
