Instructions

  1. Soak gelatin sheets in cold water for about 5 minutes until soft.
  2. In a saucepan, combine sugar, corn syrup, and water over medium heat; stir until sugar dissolves completely.
  3. Heat mixture to 240°F (115°C), then remove from heat and pour over softened gelatin while whisking continuously.
  4. Stir in vanilla extract and whisk for about 10 minutes until fluffy.
  5. Pour mixture into a greased pan lined with parchment paper and let set at room temperature for about 4 hours.
  6. Once set, invert onto a powdered sugar-dusted surface, cut into squares, and dust each piece with powdered sugar.
