- 1 cup jasmine rice
- 2 cups vegetable broth
- 14 oz firm tofu
- 2 tbsp fresh ginger, grated
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- 1 bell pepper, diced
- 3 green onions, chopped
- 2 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- Fresh cilantro (optional)
Instructions
- Rinse the jasmine rice under cold water until clear. Combine with vegetable broth in a saucepan, bring to boil, reduce heat, cover, and cook for 15 minutes until fluffy.
- Press tofu wrapped in paper towels with a weight for 15 minutes to remove moisture.
- In a pan, heat sesame oil over medium heat. Sauté diced bell peppers for about 3-4 minutes until softened; add chopped green onions and cook briefly.
- Stir in grated ginger and soy sauce; cook for another minute.
- In a separate pan, fry pressed tofu cubes in sesame oil until golden-brown on all sides (8-10 minutes).
- Combine cooked rice with sautéed vegetables and tofu; squeeze lime juice over the top and mix well.
- Serve hot, garnished with additional green onions and cilantro if desired.
