  • 1 cup brown sugar

  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, ginger, cinnamon, and salt until well combined.
  3. In another bowl, cream softened butter and eggs until fluffy. Gradually add the dry ingredients and mix until smooth.
  4. In a separate bowl, beat cream cheese until smooth, then gradually incorporate powdered sugar and vanilla extract to create the cheesecake filling.
  5. Scoop about a tablespoon of cookie dough, flatten it slightly, place half a teaspoon of cheesecake filling in the center, and wrap the dough around it to form a ball.
  6. Arrange cookie balls on prepared baking sheets about two inches apart. Bake for 12-15 minutes until golden but soft in the center.
  7. Allow cooling on wire racks before serving.
