  • 2 lbs beef chuck roast, diced
  • 1 large yellow onion, chopped
  • 2 bell peppers (any color), chopped
  • 4 cloves garlic, minced
  • 3 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 2 tsp smoked paprika
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Dice the beef chuck roast into bite-sized pieces. Chop the onions and bell peppers, and mince the garlic.
  2. In a heavy pot over medium-high heat, heat oil and sear the beef until browned on all sides (about 5-7 minutes).
  3. Add onions, bell peppers, and garlic to the pot; sauté for 3-4 minutes until softened.
  4. Stir in tomato paste and smoked paprika; cook for another minute to combine flavors.
  5. Pour in beef broth and add bay leaves along with salt and pepper. Bring to a gentle boil, then reduce heat to simmer.
  6. Cover and simmer on low heat for about 1.5 hours, stirring occasionally.
  7. Serve hot with crusty bread or over noodles/rice.
