- 8 oz whole grain fusilli pasta
- 2 cups baby spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 ripe avocado, cubed
- 1 cup Greek yogurt

- ¼ cup fresh parsley leaves
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente according to package instructions. Drain and rinse under cold water.
- While the pasta cools, chop the spinach, halve the cherry tomatoes, dice the cucumber, and cube the avocado.
