  • 1 lb lean ground turkey
  • 1 cup brown rice
  • 1 cup bell peppers, chopped
  • 1/2 cup onion, chopped
  • 2 tsp olive oil
  • 2 tbsp taco seasoning
  • 1/2 cup salsa
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado (optional)

Instructions

  1. Chop bell peppers and onions into bite-sized pieces. Rinse the brown rice under cold water until clear.
  2. In a pot, combine rice with 2 cups water. Bring to a boil, reduce heat, cover, and simmer for about 45 minutes until fluffy.
  3. Heat olive oil in a skillet over medium heat. Add onions and bell peppers; cook for about 5-7 minutes until softened.
  4. Push veggies aside in the skillet and add ground turkey. Cook until browned; stir in taco seasoning once cooked through.
  5. Mix turkey and veggies together. Assemble bowls with rice topped by the turkey mixture, salsa, lime juice, cilantro, and avocado if desired.
