  • 2 cups dried mixed fruit (raisins, currants, chopped apricots)
  • 1 cup chopped walnuts or pecans (unsalted)
  • 2 cups all-purpose flour
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 4 large eggs (room temperature)
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C). Grease a loaf pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and nutmeg; set aside.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition; mix in vanilla extract.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Fold in dried fruits and nuts evenly.
  7. Pour batter into prepared pan and bake for about 60 minutes or until golden brown. A toothpick should come out clean when inserted in the center.
