  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup raw honey
  • 1/4 cup freshly squeezed lime juice
  • 1 cup white or brown rice
  • 2 ripe avocados
  • Salt and pepper to taste

Instructions

  1. 1. Marinate the Chicken: In a bowl, whisk together soy sauce, honey, lime juice, and minced garlic. Place chicken in a resealable bag, pour marinade over it, seal, and refrigerate for at least 30 minutes.
  2. 2. Cook the Rice: Prepare rice according to package instructions. Fluff with a fork and set aside.
  3. 3. Grill/Sauté Chicken: Heat a grill pan or skillet over medium-high heat. Remove chicken from marinade (discard remaining marinade) and cook for about 6-7 minutes on each side until cooked through (165°F internal temperature). Let rest before slicing.
  4. 4. Prepare Avocado: Cut avocados in half, remove pit, scoop flesh into a bowl, mash gently with a fork, and season with salt and pepper.
  5. 5. Assemble: Layer rice on a plate, top with sliced chicken and avocado mash. Serve with extra lime wedges.
