  • 2 lbs beef chuck roast, diced
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 can (13.5 oz) coconut milk
  • 1 cup low-sodium vegetable broth
  • 2 fresh chili peppers, sliced (optional)
  • Fresh cilantro for garnish

Instructions

  1. Dice the beef chuck roast and chop the onions.
  2. Set the Instant Pot to 'Sauté' mode. Add oil and sauté onions until translucent (about 5 minutes). Stir in garlic and ginger until fragrant (about 1 minute).
  3. Add diced beef and brown on all sides.
  4. Mix in curry powder, then pour in coconut milk and vegetable broth. Stir well.
  5. Seal the lid and set to 'Pressure Cook' on high for 35 minutes.
