Ingredients

  • 2 lbs oxtails
  • 4 cups low-sodium beef broth
  • 2 medium carrots, chopped
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup red wine
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. Set the Instant Pot to 'Sauté' mode. Add olive oil and brown the oxtails on all sides. Remove them from the pot.
  2. Sauté chopped onions and minced garlic until softened and fragrant.
  3. Deglaze the pot with red wine, scraping up any browned bits.
  4. Return oxtails to the pot along with carrots, beef broth, tomato paste, salt, and pepper. Stir to combine.
  5. Seal the lid and set to 'Pressure Cook' on high for 45 minutes.
  6. Allow natural release before opening the lid. Ladle into bowls and enjoy.
