Ingredients

  • 3 lbs bone-in short ribs
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • ½ cup red wine
  • 2 tbsp balsamic vinegar

Instructions

  1. Season short ribs with salt and pepper on all sides.
  2. Set Instant Pot to 'Sauté' mode; heat olive oil and sear ribs until browned (3 minutes per side). Remove ribs.
  3. Add onions to pot; sauté until translucent (5 minutes). Stir in garlic; cook for another minute.
  4. Deglaze pot with red wine, scraping up browned bits; simmer for 2 minutes.
  5. Return short ribs to pot; add beef broth and balsamic vinegar. Stir well.
  6. Close lid and set Instant Pot to high pressure for 45 minutes. Allow natural pressure release for 10 minutes before quick release.
