  • 1 lb ground beef (80% lean)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/4 cup fresh parsley, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup marinara sauce (homemade or store-bought)
  • 4 sub rolls (hoagie-style)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, parsley, salt, and pepper. Mix until just combined; avoid overmixing.
  3. Shape the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet. Bake for about 20 minutes until golden brown.
  4. While the meatballs are baking, heat marinara sauce in a saucepan over medium heat. Once simmering, add baked meatballs to coat them in the sauce.
  5. Slice the sub rolls down the middle without cutting all the way through. Fill each roll generously with meatballs and top with mozzarella.
  6. Return assembled subs to the oven for about five minutes or until cheese is melted and bubbly.
  7. Serve hot, garnished with fresh basil and grated Parmesan if desired.
