  • 1 lb boneless, skinless chicken breasts (about 34 breasts)
  • 2 fresh jalapeños, minced
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 cloves garlic, minced
  • 2 tsp curry powder
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil

Instructions

  1. In a bowl, mix ground chicken, minced jalapeños, garlic, and curry powder until well combined. Form into one-inch meatballs.
  2. Heat olive oil in a large skillet over medium heat. Cook meatballs until golden brown on all sides (about 5-7 minutes). Remove from the skillet.
  3. In the same skillet, add coconut milk and soy sauce, scraping up browned bits from the pan.
  4. Return meatballs to the skillet and simmer in the sauce on low heat for about 10 minutes.
  5. Serve in bowls; garnish with cilantro or green onions if desired.
