  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves fresh garlic, minced
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (10.5 oz) can cream of mushroom soup
  • 2 cups tortilla chips (plain or flavored)
  • 2 cups shredded sharp cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking dish with nonstick spray.
  2. In a large pot over medium heat, cook the shredded chicken until golden brown; set aside.
  3. In the same pot, sauté onions and bell peppers until softened, about 5 minutes. Add garlic and cook until fragrant.
  4. Stir in diced tomatoes (with juices), cream of mushroom soup, shredded chicken, spices, and sour cream; mix well.
  5. In the prepared baking dish, layer half of the tortilla chips followed by half of the chicken mixture and half of the cheese. Repeat layers.
  6. Bake for 30-35 minutes until bubbly and golden on top.
