- 1 medium onion, chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced

- 1 (14.5 oz) can fire-roasted diced tomatoes
- 1 (10.5 oz) can cream of mushroom soup
- 2 cups tortilla chips (plain or flavored)
- 2 cups shredded sharp cheddar cheese
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking dish with nonstick spray.
- In a large pot over medium heat, cook the shredded chicken until golden brown; set aside.
- In the same pot, sauté onions and bell peppers until softened, about 5 minutes. Add garlic and cook until fragrant.
- Stir in diced tomatoes (with juices), cream of mushroom soup, shredded chicken, spices, and sour cream; mix well.
- In the prepared baking dish, layer half of the tortilla chips followed by half of the chicken mixture and half of the cheese. Repeat layers.
