  • 2 lbs boneless lamb shoulder, cut into chunks
  • 3 medium carrots, diced
  • 2 medium Yukon Gold potatoes, cubed
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 tsp fresh thyme
  • 2 tsp fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the carrots, potatoes, and onions into bite-sized pieces and mincing the garlic.
  2. Heat olive oil in a large pot over medium-high heat. Season the lamb with salt and pepper and sear until browned on all sides. Remove from pot and set aside.
  3. In the same pot, sauté onions and garlic until fragrant. Add carrots and potatoes, cooking for an additional minute.
  4. Deglaze the pot with red wine, scraping any bits off the bottom. Let simmer for about five minutes.
  5. Return the lamb to the pot; add beef broth, thyme, rosemary, and stir well. Bring to a gentle boil, cover, reduce heat to low, and simmer for about 90 minutes or until lamb is fork-tender.
  6. Serve warm in bowls with fresh herbs on top and crusty bread on the side.
