  • 8 oz fresh salmon fillets, skinless
  • 1 cup basil leaves, tightly packed
  • Zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper
  • 6 large rice paper wrappers
  • ½ cup cucumber, cut into thin strips
  • ½ cup bell pepper, cut into thin strips

Instructions

  1. Prepare the ingredients by slicing the salmon into thin strips and cutting the cucumber and bell pepper into matchsticks.
  2. Soak each rice paper wrapper in warm water for about 10-15 seconds until soft.
  3. Lay the softened wrapper on a clean surface. Place one strip of salmon in the center, followed by basil leaves and vegetable sticks.
  4. Fold the sides of the rice paper over the filling then roll from the bottom upwards tightly but gently.
  5. Optional: Sear in a hot pan with olive oil until golden brown on each side for added crispiness.
  6. Serve with a dipping sauce made from soy sauce mixed with lime juice and chili flakes.
