  • 34 boneless skinless chicken breasts (1 lb)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium yellow onion, diced
  • 1 cup orzo pasta
  • 6 cups low-sodium chicken broth
  • Juice and zest of 2 lemons
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft (about 5 minutes).
  2. Add garlic and chicken breasts; cook until golden brown on the outside.
  3. Pour in chicken broth, add oregano, salt, pepper, lemon juice, and zest. Bring to a boil.
  4. Reduce heat to low; simmer for about 15 minutes until chicken is cooked through.
  5. Add orzo during the last 10 minutes of cooking.
  6. Remove chicken, shred with two forks, then return to the pot and stir well.
  7. Adjust seasonings as needed and serve hot with extra lemon wedges.
