- 3–4 boneless skinless chicken breasts (1 lb)
- 3 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium yellow onion, diced
- 1 cup orzo pasta
- 6 cups low-sodium chicken broth
- Juice and zest of 2 lemons
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft (about 5 minutes).
- Add garlic and chicken breasts; cook until golden brown on the outside.
- Pour in chicken broth, add oregano, salt, pepper, lemon juice, and zest. Bring to a boil.
- Reduce heat to low; simmer for about 15 minutes until chicken is cooked through.
- Add orzo during the last 10 minutes of cooking.
- Remove chicken, shred with two forks, then return to the pot and stir well.
- Adjust seasonings as needed and serve hot with extra lemon wedges.
