Instructions
- Rinse shrimp under cold water and pat dry. In a skillet over medium-high heat, add olive oil. Sauté shrimp with salt and pepper until pink (about 2-3 minutes per side). Remove from heat.
- While shrimp cools, chop cucumber, cherry tomatoes, and red onion into bite-sized pieces.
- In a bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
- In a large bowl, combine cooled shrimp with vegetables and feta cheese. Drizzle with dressing and toss gently to coat.
