  • 1 lb large shrimp, peeled and deveined
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. In a skillet over medium-high heat, add olive oil. Sauté shrimp with salt and pepper until pink (about 2-3 minutes per side). Remove from heat.
  2. While shrimp cools, chop cucumber, cherry tomatoes, and red onion into bite-sized pieces.
  3. In a bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
  4. In a large bowl, combine cooled shrimp with vegetables and feta cheese. Drizzle with dressing and toss gently to coat.
  5. Garnish with parsley and mint. Serve chilled or at room temperature.
