  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup mini peanut butter cups (chopped)
  • 1 cup graham cracker crumbs
  • 4 tbsp butter (melted)
  • 2 tbsp cocoa powder (optional)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, combine graham cracker crumbs and melted butter; press into muffin liners for the crust.
  3. In another bowl, mix cream cheese, sugar, peanut butter, vanilla, and eggs until smooth.
  4. Fold in chopped mini peanut butter cups.
  5. Spoon the cheesecake mixture over the crusts and bake for 18-20 minutes until slightly jiggly in the center.
  6. Cool at room temperature before chilling in the fridge for at least 2 hours.
