  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, cold, cubed
  • 1/4 cup granulated sugar
  • 3 oz dark chocolate (70% cocoa), chopped
  • 1/3 cup miso paste (white or yellow)
  • 1/2 cup heavy cream
  • 2 tbsp cold water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour and cocoa powder; cut in butter until crumbly.
  3. Gradually add cold water, mixing until dough forms. Press into a tart pan and prick with a fork.
  4. Bake for 15-20 minutes until firm; cool on a wire rack.
  5. For the miso caramel, heat sugar and water in a saucepan until amber colored; remove from heat and stir in cream and miso.
  6. Melt dark chocolate using a double boiler or microwave; fold in miso caramel.
  7. Pour the chocolate mixture into the cooled crust and chill for at least two hours before serving.
