  • 2 tbsp honey or maple syrup
  • 1 tbsp olive oil
  • 1 tbsp toasted sesame seeds
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a bowl, whisk together miso paste, honey (or maple syrup), olive oil, salt, and pepper until smooth.
  3. Toss the sliced carrots in the glaze until evenly coated.
  4. Spread the carrots on a parchment-lined baking sheet and roast for 20-25 minutes until tender and caramelized.
  5. Sprinkle toasted sesame seeds over the top before serving.
