  • 2 cups cooked jasmine rice or quinoa

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

  3. Cut the eggplants in half lengthwise and score the flesh diagonally to enhance glaze absorption.
