Description

  • 34 lbs chuck roast
  • 1 packet ranch dressing mix (1 oz)
  • 1 packet au jus gravy mix (1 oz)
  • 4 banana peppers or jalapeños, sliced
  • 1 cup low-sodium beef broth
  • 2 tbsp butter (or olive oil)

Instructions

  1. Preheat oven to 275°F (135°C).
  2. Season the chuck roast evenly with ranch dressing and au jus mixes.
  3. In a skillet, melt butter over medium-high heat and sear the roast on all sides for about 4-5 minutes each until browned.
  4. Transfer the roast to a Dutch oven or slow cooker. Pour beef broth over it and scatter sliced peppers around.
  5. Cover and cook in the oven for 3-4 hours or in a slow cooker on low for about 8 hours until fork-tender.
  6. Shred the meat and mix back into the gravy before serving.
