- 1 cup low-sodium beef broth

Instructions
- Preheat oven to 275°F (135°C).
- Season the chuck roast evenly with ranch dressing and au jus mixes.
- In a skillet, melt butter over medium-high heat and sear the roast on all sides for about 4-5 minutes each until browned.
- Transfer the roast to a Dutch oven or slow cooker. Pour beef broth over it and scatter sliced peppers around.
- Cover and cook in the oven for 3-4 hours or in a slow cooker on low for about 8 hours until fork-tender.
- Shred the meat and mix back into the gravy before serving.
