Description

Ingredients

  • 2 lbs ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 cup chopped bell peppers (mixed red and green)
  • 1 cup chopped onion (yellow or white)
  • 1 cup BBQ sauce (divided)
  • 1/4 cup hot pepper rings

Instructions

  1. Finely chop bell peppers and onion.
  2. In a large bowl, mix ground beef, breadcrumbs, eggs, bell peppers, onions, and half of the BBQ sauce until just combined.
  3. Shape the mixture into a loaf and place it in the crock pot.
  4. Pour the remaining BBQ sauce over the meatloaf and top with hot pepper rings.
  5. Cover and cook on low for 6-7 hours or high for 4 hours until the internal temperature reaches 160°F.
  6. Slice and serve with your favorite sides.
