  • 1 cup heavy cream
  • 8 oz semi-sweet or dark chocolate (for ganache)

Instructions

  1. Preheat oven to 425°F (220°C). In a saucepan, combine water, butter, 1/4 cup sugar, and salt; bring to a boil.
  2. Stir in flour until a smooth ball forms. Remove from heat and let cool slightly.
  3. Incorporate eggs one at a time, mixing until smooth after each addition.
  4. Pipe 4-inch lines onto parchment-lined baking sheets and bake for 25-30 minutes until golden brown.
  5. For the filling, whip heavy cream with remaining sugar and coffee extract until soft peaks form.
  6. Prepare ganache by heating heavy cream and pouring it over chopped chocolate; whisk until smooth.
  7. Slice cooled éclairs, fill with coffee cream, and dip tops in ganache.
