  • 2 cups low-sodium vegetable broth
  • 1 cup sliced fresh mushrooms (cremini or shiitake)

  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter

Instructions

  2. Add sliced mushrooms and sauté until golden brown (about 5 minutes).
  3. Stir in Arborio rice and toast lightly for 2 minutes.
  4. Gradually add vegetable broth, one cup at a time, stirring frequently until absorbed. Continue until rice is al dente (approximately 20-25 minutes).
  5. Remove from heat; fold in tahini and grated Parmesan until well combined.
  6. Serve in bowls with additional cheese and a drizzle of olive oil if desired.
