1 cup green beans, trimmed and cut into 1-inch pieces
1 (28 oz) can whole peeled tomatoes
4 cups low-sodium vegetable broth
1 (15 oz) can red kidney beans, drained and rinsed
1 (15 oz) can cannellini beans, drained and rinsed
1 cup ditalini pasta
2 tsp Italian seasoning
2 cups fresh spinach or kale
Salt and black pepper, to taste
Optional: Fresh basil leaves, chopped
Optional: Grated Parmesan cheese for serving
Instructions
- Wash and chop zucchini, carrots, celery, and mince garlic.
- Heat olive oil in a large pot over medium heat. Add chopped onions and cook until translucent.
- Stir in zucchini, carrots, celery, and garlic. Sauté until slightly softened.
- Pour in canned tomatoes (with juices) and vegetable broth. Bring to a gentle simmer.
- Stir in ditalini pasta and Italian seasoning. Cook until pasta is al dente.
