  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 lb new potatoes, halved
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp dried oregano
  • Salt & pepper to taste
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a large baking dish with nonstick cooking spray.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat each chicken breast in the marinade.
  3. Add halved new potatoes to the bowl and toss until well-coated.
  4. Arrange chicken in the center of the baking dish surrounded by potatoes and pour any remaining marinade over them.
  5. Roast for 30–35 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  6. Garnish with chopped parsley before serving.
