- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 lb new potatoes, halved
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 2 tsp dried oregano
- Salt & pepper to taste
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a large baking dish with nonstick cooking spray.
- In a bowl, mix olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Coat each chicken breast in the marinade.
- Add halved new potatoes to the bowl and toss until well-coated.
- Arrange chicken in the center of the baking dish surrounded by potatoes and pour any remaining marinade over them.
- Roast for 30–35 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- Garnish with chopped parsley before serving.
