  • 4 boneless chicken breasts (1.5 lbs)
  • 2 large sweet potatoes (about 1 lb), cubed
  • 1/4 cup pure honey
  • 1/2 cup barbecue sauce
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash, peel, and cube sweet potatoes into one-inch pieces.
  3. In a bowl, mix olive oil, salt, pepper, garlic powder, smoked paprika, and thyme. Coat chicken breasts in this mixture.
  4. In another bowl, coat cubed sweet potatoes with olive oil and salt.
  5. Combine honey and barbecue sauce in a small bowl to create the glaze.
  6. On a lined baking sheet, arrange seasoned chicken and sweet potatoes side by side. Drizzle half of the glaze over them.
  7. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are tender. Brush on remaining glaze halfway through cooking.
  8. Let cool slightly before serving.
