  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning

Instructions

  1. In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper; sauté until golden brown on both sides (about 5 minutes per side). Remove from pan.
  2. In the same skillet, add sliced onions and bell peppers; cook until soft and caramelized (about 5 minutes).
  3. Stir in rinsed rice and taco seasoning; pour in chicken broth and stir well.
  4. Slice the sautéed chicken into bite-sized pieces and return to the pan. Bring to a simmer and cover.
  5. Reduce heat to low; cook for about 20 minutes or until the liquid is absorbed and rice is tender.
  6. Fluff with a fork before serving; drizzle with extra taco sauce if desired.
