  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Season the chicken breasts with salt and pepper. In a large pot, heat olive oil over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from the pot and let rest.
  2. In the same pot, add butter and minced garlic; sauté for about 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream, stirring well. Bring to a gentle simmer.
  4. Add rigatoni to the pot, cooking according to package instructions until al dente (about 10-12 minutes), stirring occasionally.
  5. While the pasta cooks, slice the rested chicken into bite-sized pieces. Once the pasta is done, stir in Parmesan cheese until melted and creamy. Add sliced chicken back into the pot and mix well.
  6. Serve immediately, garnished with extra Parmesan and fresh parsley if desired.
