Ingredients

Scale
  • 24 Oreo cookies (for crust and filling)
  • 5 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature
  • Whipped cream (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Crush 24 Oreo cookies into fine crumbs.
  2. Mix cookie crumbs with melted butter until it resembles wet sand. Press this mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for 8-10 minutes and let cool slightly.
  4. In a large bowl, beat softened cream cheese and sugar until smooth. Add sour cream and vanilla; mix well.
  5. Add eggs one at a time while mixing on low speed. Fold in 6 chopped Oreos.
  6. Pour the filling into the cooled crust and bake for 50–60 minutes until set but slightly jiggly in the center.
  7. Turn off the oven, crack open the door, and let cool for about an hour. Refrigerate for at least four hours or overnight before serving.
