  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk (or almond milk)
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 6 Oreo cookies (crushed, plus extra for topping)
  • 1 cup buttercream frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract. Combine this with the dry ingredients until just mixed; do not overmix.
  4. Fold in crushed Oreos into the batter.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool for about 10 minutes before transferring to a wire rack. Once cooled, frost with buttercream frosting and top with additional crushed Oreos.
