- 1/2 cup fresh mint leaves
- 1/3 cup freshly squeezed lime juice (about 3 limes)
- 1/2 cup simple syrup (made from equal parts sugar and water)
- 1/2 cup filtered water
Instructions
- Prep your ingredients: Halve the passion fruits and scoop out the pulp into a bowl. Rinse the mint leaves.
- Create your mixture: Blend together the passion fruit pulp, mint leaves, lime juice, simple syrup, and water until smooth (about 30 seconds).
- Taste test: Adjust sweetness by adding more simple syrup if desired.
- Fill your molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks carefully.
- Freeze: Place molds in the freezer for at least 4-6 hours or until solid.
