  • 1 cup low-fat cottage cheese
  • 1/2 cup creamy peanut butter (or crunchy)
  • 2 tbsp honey or maple syrup
  • 1 tsp pure vanilla extract
  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).

  3. Press the mixture into the bottoms of cupcake molds or small cups to create the crust.

  6. Bake for 20 minutes until set but jiggly in the center. Cool before chilling in the fridge for at least an hour.
