- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup pecans, toasted (divided)
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- ½ cup brown sugar
- 1 cup sour cream
- ¼ cup Karo syrup
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter. Press firmly into the bottom of a springform pan.
- In another bowl, beat cream cheese, granulated sugar, brown sugar, and sour cream until creamy. Fold in half of the toasted pecans.
- Pour filling over crust and smooth the top. Bake for 50-60 minutes until slightly jiggly in the center.
- For topping, heat Karo syrup with remaining pecans in a saucepan until warmed. Once cheesecake cools, pour topping over it and chill for at least four hours before serving.
