- Salt and pepper, to taste
Instructions
- 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
- 2. While the pasta cooks, blend basil, pistachios, garlic, and Parmesan in a food processor until finely chopped. Gradually drizzle in olive oil while processing until smooth.
- 3. Reserve ½ cup of pasta water before draining the cooked pasta. In a large bowl, combine hot pasta with the pesto. If needed, add reserved pasta water for desired creaminess.
- 4. Stir in lemon juice and season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan or toasted pistachios.
