  • 1 cup unsalted pistachios (shelled)

  • 2 tbsp fresh lemon juice
  • 2 garlic cloves
  • Salt and pepper, to taste

Instructions

  1. 1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes.
  2. 2. While the pasta cooks, blend basil, pistachios, garlic, and Parmesan in a food processor until finely chopped. Gradually drizzle in olive oil while processing until smooth.
  3. 3. Reserve ½ cup of pasta water before draining the cooked pasta. In a large bowl, combine hot pasta with the pesto. If needed, add reserved pasta water for desired creaminess.
  4. 4. Stir in lemon juice and season with salt and pepper to taste. Serve immediately, garnished with extra Parmesan or toasted pistachios.
