  • 1 (3.4 oz) box pistachio pudding mix
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 1 cup chopped pistachios, toasted
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs one at a time and stir in the vanilla extract until smooth.
  4. In another bowl, combine the flour and pistachio pudding mix; gradually add to the wet mixture until just combined.

  6. Drop tablespoon-sized mounds of dough onto the prepared baking sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes or until edges are golden while centers remain soft. Cool before transferring to wire racks.
