  • 1 cup water
  • 1 cup protein powder (vanilla or chocolate)
  • ¾ cup granulated sweetener (monk fruit or erythritol)
  • 1 tsp vanilla extract

Instructions

  1. Gather all ingredients and tools: mixing bowl, electric mixer, and a parchment-lined baking dish.
  2. In a small pot over low heat, combine water and gelatin until dissolved. Allow to cool slightly.
  3. In another bowl, mix the granulated sweetener and protein powder. Add additional flavorings if desired.
  4. With an electric mixer on high speed, slowly pour in the gelatin mixture until fluffy and doubled in volume (about 5 minutes).
  5. Spread the mixture evenly into the lined baking dish and let it sit at room temperature for about 4 hours until firm.
  6. Cut into squares and dust with extra protein powder if desired before serving.
