  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold)
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg (for egg wash)
  • Pinch of salt
  • Ice water as needed

Instructions

  1. Prepare the Dough: In a bowl, combine flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap and chill for 30 minutes.
  2. Make the Filling: Mix pumpkin puree, sugar, cinnamon, nutmeg, and salt in another bowl until blended.
  3. Roll Out & Cut: On a floured surface, roll half the dough to 1/8 inch thick. Cut into 4-inch circles.
  4. Fill & Seal: Spoon filling onto half of each circle, fold over the other half, and seal with a fork.
  5. Bake: Preheat oven to 375°F (190°C). Brush with egg wash and bake on parchment-lined sheets for 25 minutes or until golden.
