- Ice water as needed
Instructions
- Prepare the Dough: In a bowl, combine flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Wrap and chill for 30 minutes.
- Make the Filling: Mix pumpkin puree, sugar, cinnamon, nutmeg, and salt in another bowl until blended.
- Roll Out & Cut: On a floured surface, roll half the dough to 1/8 inch thick. Cut into 4-inch circles.
- Fill & Seal: Spoon filling onto half of each circle, fold over the other half, and seal with a fork.
- Bake: Preheat oven to 375°F (190°C). Brush with egg wash and bake on parchment-lined sheets for 25 minutes or until golden.
