Description

  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon (freshly ground preferred)
  • 1/4 tsp nutmeg (freshly grated preferred)
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg until combined.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, and eggs until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour half the batter into the prepared bundt pan. Sprinkle a cinnamon-brown sugar mixture over it (equal parts brown sugar and cinnamon), then add the remaining batter on top.
  6. Bake for 40-50 minutes until golden brown; a toothpick should come out clean. Let cool slightly before glazing with powdered sugar mixed with milk.
