- 1 tsp vanilla extract
- For filling: 2 cups powdered sugar, 3 tbsp milk, and ½ tsp vanilla extract

- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine oats, flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, cream butter and brown sugar until fluffy (about 3 minutes). Add pumpkin and vanilla; mix well.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Scoop dough onto prepared sheets two inches apart. Bake for 12-15 minutes until golden but soft in the center.
- For the filling, whisk together powdered sugar, milk, and vanilla until smooth.
- Once cookies cool, spread filling between two cookies to make sandwiches.
