  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • For filling: 2 cups powdered sugar, 3 tbsp milk, and ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy (about 3 minutes). Add pumpkin and vanilla; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Scoop dough onto prepared sheets two inches apart. Bake for 12-15 minutes until golden but soft in the center.
  6. For the filling, whisk together powdered sugar, milk, and vanilla until smooth.
  7. Once cookies cool, spread filling between two cookies to make sandwiches.
