  • 3 cups fresh pumpkin, peeled and cubed
  • 1 large onion, chopped
  • 23 cloves garlic, crushed
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • Pinch of nutmeg (freshly grated if possible)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your pumpkin by peeling and cubing it.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent. Add crushed garlic and cook until fragrant.
  3. Stir in the cubed pumpkin, cinnamon, and nutmeg; cook for about 5 minutes until aromatic.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes until the pumpkin is tender.
  5. Add coconut milk and blend until smooth using an immersion blender.
