  • 2 cups all-purpose flour

  • 1/2 cup brown sugar (light or dark)

  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup vegetable oil
  • 2 large eggs
  • For the streusel topping: 1/2 cup brown sugar, 1/3 cup all-purpose flour, 3 tbsp melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs; whisk until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. For the streusel topping, mix brown sugar, flour, and melted butter in a separate bowl until crumbly.
  6. Pour half of the batter into the loaf pan; sprinkle half of the streusel topping over it. Add remaining batter and top with remaining streusel.
  7. Bake for 60–70 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
