- 1/2 cup vegetable oil
- 2 large eggs
- For the streusel topping: 1/2 cup brown sugar, 1/3 cup all-purpose flour, 3 tbsp melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In one bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, and eggs; whisk until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined.
- For the streusel topping, mix brown sugar, flour, and melted butter in a separate bowl until crumbly.
- Pour half of the batter into the loaf pan; sprinkle half of the streusel topping over it. Add remaining batter and top with remaining streusel.
- Bake for 60–70 minutes or until a toothpick inserted comes out clean. Allow cooling before slicing.
