  • 2 large flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked chicken, shredded or diced (or black beans for a vegetarian option)
  • 1/2 cup bell peppers, sliced (any color)
  • 1/2 medium onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream (for serving)

Instructions

  1. In a skillet over medium heat, sauté the diced onions and sliced bell peppers for about five minutes until softened. Add cooked chicken or beans and half the cilantro; season with salt and pepper.
  2. In another skillet, warm one tortilla on low heat and sprinkle half the shredded cheese on one side.
  3. Once the cheese begins to melt (about a minute), add the filling on top of the cheese and sprinkle more cheese before folding the tortilla in half.
  4. Cook for about two minutes on each side until golden brown and crispy using a spatula to flip gently.
  5. Remove from heat, let cool briefly, slice into wedges, and serve with sour cream.
