Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two round 9-inch baking pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt; set aside.
  3. In another bowl, mix together vegetable oil, sugar, eggs, buttermilk, vanilla extract, and red food coloring until well combined.
  4. Gradually add dry ingredients to the wet mixture; mix gently until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. Prepare cream cheese frosting by beating together cream cheese and butter until smooth; gradually add powdered sugar until fluffy.
  7. Once cooled, frost the top of one cake layer before adding the second layer, then frost the top and sides.
