  • 2 large eggs
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • For the Cream Cheese Filling: 8 oz cream cheese, softened, 1 cup powdered sugar, 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time along with vanilla extract and red food coloring.
  4. Gradually mix in dry ingredients until just combined.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them two inches apart.
  6. Bake for 10-12 minutes until edges are set but centers are slightly underbaked. Cool on wire racks.
  7. For the filling, beat cream cheese with powdered sugar and vanilla until smooth.
  8. Spread or pipe filling on one cookie and top with another to form sandwiches.
