  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • Berry sauce (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). In a bowl, mix graham cracker crumbs with melted butter until moistened. Press into the bottom of an 8×8 inch baking dish.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar while mixing until fluffy. Stir in sour cream and vanilla extract.
  3. Spread half of the cheesecake mixture over the crust. Layer sliced strawberries on top, then spread the remaining cheesecake mixture.
  4. Scatter fresh blueberries over the top layer. Bake for about 40 minutes or until set but slightly jiggly in the center.
  5. Allow to cool at room temperature before chilling in the refrigerator for at least four hours before slicing.
