  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 drops red food coloring
  • 2 drops blue food coloring
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon fresh chives, finely chopped (optional)

Instructions

  1. Boil the Eggs: Place the eggs in a saucepan with cold water. Bring to a boil over medium heat. Once boiling, cover and remove from heat; let sit for 12 minutes.
  2. Cool Down: Transfer the eggs to an ice bath for a few minutes to cool.
  3. Peel: Gently tap and roll each egg on a hard surface, then peel under running water.
  4. Make Filling: Cut the eggs in half lengthwise and scoop out yolks into a mixing bowl. Add mayonnaise, mustard, salt, and pepper; mix until smooth.
  5. Add Color: Divide yolk mixture into two bowls. Mix red food coloring into one bowl and blue into another until desired shades are achieved.
  6. Fill & Garnish: Spoon or pipe red filling into half the egg whites and blue filling into the other half. Top with chopped chives if desired.
